Yuzu is a variety of Asian citrus fruit. It’s tart flavor and sour juice is commonly used for sauces, desserts and marmalades. The color of a yuzu can vary from yellow to green when ripe and its skin surface is irregular and knobbly. Widely used in Chinese, Korean and Japanese cuisines, Western chefs and Mixologists have discovered yuzu and have adapted the intensity of its flavor into their dishes and beverages.
Native to India and Nepal, Lemongrass is widely used as an herb in Asian cuisine, including Thai, Vietnamese, Cambodian, Indonesian and Indian cooking. It has a zesty citrus flavor and aroma and can be dried and powdered, or used fresh. Lemongrass is also known as “Gavati Chaha” and is used in ancient Indian Ayurvedic medicines to combat cough, cold and fever.
Widely grown worldwide as a backyard shrub, Kaffir Lime is native to Laos, Indonesia, Malaysia and Thailand. The skin of this small, bumpy green fruit is coarse and the lime has a distinctive flavor – pungent and lemony. Kaffir lime leaves have an incredible scent and taste and the aromatic leaves are rich in natural oils. Kaffir leaves are typically torn or chopped into smaller pieces to be added to curry dishes, soups, fish stews, and poultry dishes to enhance the flavor with a citrus taste.
